Jordan:

Jordan is a kingdom layered in
antiquity, from the work of
Nabataean stonemasons to
characters such as Moses and
Lawrence of Arabia; from ancient
cities and Biblical sites to
desert castles, Crusader forts
and Byzantine mosaics. This
ancient culture belies the fact
that it is also a modern
country, with a good
infrastructure, a thriving
business and arts scene, and

and shopping opportunities. The
contradictions between the old
and new are astonishing.
Jordan is a relatively small country of varied landscapes,
where the fertile Jordan Valley,
bordering the entire western
side of the kingdom, is
separated from the immense
desert stretching to the east by
the populated highlands. As part
of the Great Rift Valley, the
Jordan Valley incorporates the
Dead Sea, the lowest point on
the earth's surface and most
famous for its heavy salt and
mineral concentrations, while
the main towns are strung out
along the length of the highland
plateau, including the friendly
capital, Amman, as well as
plenty of historical sites from
ancient civilisations.

Attractions:
Petra:
Nothing really prepares you for
this amazing place. Often
described as the eighth wonder
of the ancient world, it is
without doubt Jordan’s most
valuable treasure and greatest
tourist attraction. It is a
vast, unique city, carved into
the sheer rock face by the
Nabataeans, an industrious Arab
people who settled there more
than 2000 years ago. It has to
be seen to be believed.
Citadel Hill: From its
position on top of a hill
overlooking the city, the
Citadel stands testament to the
history of Amman, with its
ancient ruins and excavated
relics, alongside those from
throughout the country, housed
in the Jordan Archaeological
Museum.

Roman Theatre:
Below the Citadel is
the magnificent Roman
amphitheatre, an
impressive relic from
ancient Philadelphia
that is cut into the
hill and can seat up to
6,000 people.
Jerash:
Situated about 50km
north of Amman is one of
the top attractions in
Jordan, the ancient city
of Jerash, which is
considered to be one of
the best preserved Roman
sites in the world. Its
exceptional state of
preservation is due to
the fact that it was
buried in sand for
centuries.
Desert Castle Loop:
Stretching to the east
of Amman towards Saudi
Arabia and Iraq is the
vast desert plain where
a cluster of historic
ruins such as castles,
forts, baths and palaces
have been preserved and
are collectively known
as desert castles.
Dead Sea:
Situated about 45km
from Amman, lies the
famous geographic
attraction known as the
Dead Sea, which is the
lowest point on earth at
407m below sea level.
Devoid of plant or
animal life due the high
salt concentration (four
times saltier than
normal sea water), it is
the incredible mineral
rich water that has made
it an internationally
sought-after destination
since ancient times,
popular for its curative
properties as well as
for the experience of
floating effortlessly on
its surface.
Mt Nebo:
The most sacred site in
Jordan, Mt Nebo is
believed to be the
burial site of Moses who
climbed the hill in
order to survey the
Promised Land that he
would never enter.
Wadi Rum:
Lying 68km north of
Aqaba, the scenery of
Wadi Rum is acclaimed to
be one of the most
stunningly beautiful
desert landscapes in the
world and is a major
tourist destination in
Jordan. Towering
mountains of weathered
sandstone rise
vertically from the pink
desert sands where the
vast emptiness and
silence is breathtaking.
Madaba:
The Medeba of the Bible
is today Madaba, 'the
City of Mosaics', most
famous for its
spectacular Byzantine
and Umayyad mosaics from
the 5th to 7th
centuries, which are
scattered throughout the
town's homes and
churches.

Butter Chicken Punjabi style
|
INGREDIENTS:
1kg chicken breast or thigh fillets
600mls of lite chickened cream
1 large onion brown
2 cloves of garlic
1 large well ripened tomato
1tablespoon diced fresh ginger
½ teaspoon cumin seeds
½ teaspoon chilli…….OR more or less to taste
½ teaspoon tumeric
1 tablespoon sweet paprika
1 tablespoon garam masala
1-2 tablespoon good olive oil
1-1.5 level teaspoon rock salt (or to taste)

4 bay leaves (optional: add at the same time as tomato)
¼ cup unsalted cashew nuts (optional: add with tomato)
Ingredients are available to purchase at Indian shops.
METHOD:
Cut chicken into 1.5 to 2cm cubes.
Finely dice onion, garlic, ginger and tomato……keep each separate
Now for the Cooking:
In medium to large heavy saucepan or pan, add oil & onion cook for 2-3 minutes above medium heat, then add garlic and ginger cook for further 2-3 minutes until onions transparent (ensure that garlic or ginger do not burn).
Add cumin seeds, tumeric, garam masala, paprika, chilli, salt heat for 30 second then add tomato, stir in thoroughly and continue to stir and mix for 1-2 minutes on medium to high heat.
Add chicken pieces, mixing it in and heat till half cooked on medium to high heat.
Then add cream and let it simmer on LOW heat until cooked.( make sure when cooked cream has been reduced to at least 75% of original volume – not runny)
Serve with bed of basmati rice.
