Grand Palace:
Construction began in
1782 and was completed
in time for the
coronation of King Rama
I in 1785. Today it

Emerald Buddha sculpted
from a single piece of
jade, and one of the
most revered objects in
the Kingdom.
The Royal Barges
National Museum
houses several
decorative royal barges,
the earliest of which
dates back to 1357. Most
of the barges served as
War Vessels at one
point, and were
subsequently used on
royal or state occasions
on the Chao Phraya
River.
The Temple of the
Reclining Buddha (Wat
Pho)
is Bangkok's oldest, largest and most famous temple. The
grounds of Wat Pho
contain over 1,000
statues of Buddha, and
the temple houses one of
Thailand's most
spectacular sights, the
Reclining Buddha - a 48m
long and 15m high statue
that is gold-plated and
inlaid with
Mother-of-Pearl on the
soles of its feet.
Kanchanaburi:
130km west of Bangkok,
the town of Kanchanaburi
is the site of the
Bridge Over The River
Kwai, where during
World War II Allied
prisoners of war were
used by the Japanese to
build the Death Railway
and thousands died at
the hands of their
captors. With its modern
hotels and welcoming
air, Kanchanaburi seems
an unlikely setting, but
the bridge is still in
use and the graves of
the Allied soldiers are
testament to the town's
unfortunate past.

Pad Thai
Pad Thai is one of the most
popular Thai dishes and can
be bought in most
restaurants and many street
stalls all over Thailand.
Although eating off the
streets may not be advisable
in many countries, sitting
down for a bowl of noodles
at one of Thailand's
ubiquitous noodle stalls is
not only safe but also a
culinary delight.
Noodle vendors can be found
on street corners, in
alleys, along rivers, at
markets, and in canoes along
canals and at popular
floating markets. A good
rule of thumb for choosing
among street stalls is to
find those frequented by
Thais. Thai diners usually
have good taste and their
presence at a particular
stall is often an indication
that it is worth a try.

INGREDIENTS:
250g Chang's Thai-style Rice Noodles
1/4 cup fish sauce
2 tablespoons palm sugar or brown sugar
1/4 cup lime juice
2 tablespoons peanut oil
2 chicken breast fillets, trimmed, thinly cut
3 eschalots, thinly sliced
2 garlic cloves, crushed
1 small red chilli, finely chopped
2 eggs, lightly beaten
1/2 cup roasted peanuts, finely chopped
125g beansprouts, trimmed
coriander leaves and lime wedges, to serve

METHOD:
Place noodles in a large bowl. Cover with warm water and stand for 7 minutes or until tender. Drain and refresh under cold water. Combine fish sauce, sugar and lime juice in a jug. Set aside.
Heat wok over high heat until very hot. Add 2 teaspoons oil and swirl to coat. Add a third of chicken and stir-fry for 1 minute or until golden. Transfer to a plate. Repeat twice with with oil and remaining chicken.
Add remaining 2 teaspoons oil to wok and swirl to coat. Add eschalots, garlic and chilli. Stir-fry for 1 minute. Push to side. Add eggs and cook until slightly set. Stir eggs to scramble. Add noodles, fish sauce mixture, peanuts, beansprouts and chicken. Stir-fry for 1 to 2 minutes or until heated through. Serve with coriander and lime wedges.
Variation: You could add 200g cooked, peeled prawns in step 3.
