Destination:
Malaysia

'Selamat Datang'
is the
traditional
Malaysian
greeting that
welcomes
visitors to this
vibrant and
exotic country.
Ethnically
diverse cultures
share the same
lush landscape
and create a
fusion of
cultural styles,
cooking and
religions that
is distinctly
Malaysian.
Festivals
throughout the
year mark the
Malay, Chinese
and Indian
holidays, as
well as those of
the indigenous
Orang Asli and
the tribes of
Sabah and
Sarawak.
Malaysia is a
country with two
distinct parts.
Peninsula
Malaysia
constitutes the
long fringe of
land, extending
down from Asia,
which borders
Thailand and
Singapore. The
South China Sea
separates the
mainland from
the less
populated East
Malaysian
provinces of
Sabah and
Sarawak.
The dense
jungles of
Sabah and
Sarawak
support abundant
plant and
wildlife and Mt
Kinabalu in
Sabah stakes its
claim as the
highest peak in
South East
Asia. View
amazing wildlife
and flora, from
orangutans,
turtles and
birds to
Rafflesia, the
world's largest
flower. See
indigenous
communities
living in their
longhouses as
they have for
centuries. Visit
one of the many
national parks
or the caves of
Miri & Mulu.
Dive and
discover an
underwater world
offering
sightings of
colourful
corals, basking
sharks and a
constantly
moving
kaleidoscope of
tropical fish.
These are just
a selection of
amazing options
that Malaysian
Borneo can offer
you.
|
It is however, the
Peninsula that seems to
attract the most
visitors, probably
because of the diversity
it offers in the way of
people, activities and
climates. The highland
regions offer cool
relief from the clinging
humidity of the
mainland, while Langkawi
and Penang are popular
choices for sand and
surf enthusiasts.
Amidst a group of 99
islands, Langkawi
is a paradise where you
can stay and relax, or
explore the local
scenery and wildlife.
The jungle forms a
backdrop to ancient
rainforest areas in the
north, while sandy
beaches with shading
coconut trees can be
found on the south coast
- choose a resort to
suit your taste! Langkawi
is also a duty free
island - so the shopping
opportunities are
fantastic.
Known as the ‘Pearl of
the Orient’ Penang
is a tropical island
offering more than just
relaxation. Georgetown
offers an historic
‘colonial feel’ with its
British colonial
architecture, Chinese
shop houses &
interesting buildings
that can be found on the
heritage trail. The
north of the island is
where you will find the
beach town area of Batu
Ferringhi. Relax in one
of the beach side
resorts, shop for a
bargain at the night
markets or why not try
the local cuisine at one
of the many Hawkers
style food stalls.
The east coast,
particularly the
northern Kelantan
province, offers the
chance for an
interesting cultural
exploration of
traditional Malay life.
The city of Kota
Bharu and its
surrounds is possibly
the most fascinating
part of the peninsula,
and the least visited,
with a remote beauty and
rich culture.
The west coast is
favoured for historical
interest, and is where
Malaysia's capital city,
Kuala Lumpur is
found, the icon of Asian
prosperity and the
meeting point for expats
and city slickers who
enjoy the energy of
urban life. The city is
a powerful mesh of
tradition and
technology, vying for
equal status and boasts
an exciting array of
things to do and see.
Take the time to explore
various landmarks of the
city; the Petronas Twin
Towers, KL Tower, and
the National Monument
just to name a few.
Grab a bargain in this
shopper’s paradise.
There is a wide range of
goods from designer
fashions and fashion
accessories to
electronic items all at
arguably Asia’s best
prices. Sampling the
many gourmet delights.
From 5 star restaurants
to roadside hawkers’
stalls the choice of
cuisine is amazing. The
multiracial blend of
Malay, Chinese, Indian
and European makes this
a truly cosmopolitan and
fascinating city.

Recipe of
the Week:
Malaysian
Nasi Lemak
Perhaps the closest thing to
a Malaysian National Dish is
nasi lemak - rice cooked in
coconut milk and eaten with
a range of side dishes and
condiments.
|
|
INGREDIENTS
For the rice:
2 cups coconut milk
2 cups water
1/4 teaspoon ground ginger
1cm fresh ginger, peeled & thinly sliced
salt to taste
1 whole bay leaf
2 cups long grain rice, rinsed and drained
For the garnish:
4 eggs
1 cucumber
1 cup oil for frying
1 cup raw peanuts
120 grams white anchovies, washed
|
 |
|
For the sauce:
2 tablespoons vegetable oil
1 medium onion, sliced
3 cloves garlic, thinly sliced
3 shallots, thinly sliced
2 teaspoons chile paste
120 grams white anchovies, washed
salt to taste
3 tablespoons white sugar
1/4 cup tamarind juice
METHOD:
In a medium saucepan over medium heat, stir
together coconut milk, water, ground ginger,
ginger root, salt, bay leaf, and rice.
Cover, and bring to a boil. Reduce heat, and
simmer for 20 to 30 minutes, or until done.
Place eggs in a saucepan, and cover with
cold water. Bring water to a boil, and
immediately remove from heat. Cover, and let
eggs stand in hot water for 10 to 12
minutes. Remove eggs from hot water, cool,
peel and slice in half. Slice cucumber.
Meanwhile, in a large skillet or wok, heat 1
cup vegetable oil over medium-high heat.
Stir in peanuts and cook briefly, until
lightly browned. Remove peanuts with a
slotted spoon and place on paper towels to
soak up excess grease. Return skillet to
stove. Stir in the contents of one package
anchovies; cook briefly, turning, until
crisp. Remove with a slotted spoon and place
on paper towels. Discard oil. Wipe out
skillet.
Heat 2 tablespoons oil in the skillet. Stir
in the onion, garlic, and shallots; cook
until fragrant, about 1 or 2 minutes. Mix in
the chile paste, and cook for 10 minutes,
stirring occasionally. If the chile paste is
too dry, add a small amount of water. Stir
in remaining anchovies; cook for 5 minutes.
Stir in salt, sugar, and tamarind juice;
simmer until sauce is thick, about 5
minutes.
Serve the onion and garlic sauce over the
warm rice, and top with peanuts, fried
anchovies, cucumbers, and eggs.
