Scandinavia

Scandinavia is located in the
northern part of the European
Continent, and consists of three
countries: Denmark, Norway and
Sweden . The term "Northern
Europe" usually refers to a
total of five countries: the
three nations of Scandinavia,
and neighbouring Finland and
Iceland.
Denmark:
Best known for its large dogs
and Viking warriors, Denmark is
a small, prosperous and highly
functional kingdom in northern
Europe that is often overlooked
by travellers on their 'grand
tour', although it has one of
the highest standards of living
in the world and plenty of
charming experiences to offer
visitors.
It is almost totally surrounded
by water, consisting as it does
of the Jutland Peninsula and 482
islands. Its only land border is
with Germany. The country's
capital city, lovely and lively
Copenhagen, occupies the biggest
of the offshore islands. With
all the water, it is not
surprising that Denmark is very
reliant on shipping and fishing;
the country also has an
important agricultural sector,
though, and is famed in
particular for its dairy
products. Lovers of butter and
cheese will enjoy a taste of
Denmark!
Denmark boasts small green
farms, blue lakes and white
coastal beaches, the rural areas
sprinkled with thatched
cottages, castles and windmills
across a gentle landscape which
lends itself well to cycle
touring. The cities are modern
and bustling, but an air of
medieval charm has been
preserved in old sections of
colourful buildings and
cobblestone streets. The country
boasts 280 museums, most of the
important ones in Copenhagen,
including the Viking Ship Museum
that is devoted to honouring
Denmark's bold ancient mariners.
Other special attractions
include the annual summer music
festival in Roskilde, which is
one of the largest in Europe;
the Tivoli Gardens amusement
park which has entertained
crowds in Copenhagen since 1843;
and one of the world's longest
bridges, which spans 10 miles
(16km), joining Denmark to
Sweden.
The country is compact with an
excellent road and rail
transport system, and numerous
ferry connections to the myriad
offshore islands. It all adds up
to a very civilised destination,
as sweet and tempting as the
rich, flaky pastry treats that
the world has come to know as
the 'Danish'.
Norway:
Norway is a wildly beautiful
country of snow-capped mountains
and deep glacier-carved fjords.
The astounding scenery of the
south-western fjordland is the
main drawcard for tourists, but
there are many incentives to
visit this sparsely inhabited
country. It offers remote
wildernesses and outdoor
activities, fairylike forests,
historic towns and charming
fishing villages, down to earth
friendly people, and the lure of
the Arctic Circle with its
famous Midnight Sun and surreal
Northern Lights. It also boasts
some of the most scenic bus
trips, boat cruises and train
rides in the world.
'The Land of the Midnight Sun',
with its long summer days, is
not only for nature lovers and
outdoor enthusiasts, but offers
a rich cultural heritage from
the Vikings, the traditional
nomadic Sami people of the
remote northern regions, and
world-renowned artists such as
Edvard Munch. Principle cities
of interest are Oslo, the
prettily sited capital; the
historic trading port of Bergen,
situated on the fjords and
gateway to the Fjordlands; and
hilly Tromsø within the Arctic
Circle, the centre of the
Northern Lights activity. They
are pleasant, low-key cities
that offer a good range of
museums, historical sights and
unique architecture.
Norway's greatest impact on history was during the Viking
Age, when the sleek
Viking ships crossed the
Atlantic, and Europe was
subjected to numerous
raids. Traditionally
Norwegians were
explorers, and their
influences are evident
from the Viking
settlements established
in Scotland, to the more
recent personalities
like polar explorer
Roald Amundsen, and the
legendary Pacific
crossing of Thor
Heyerdahl on his wooden
raft, the Kon-Tiki.

Today Norwegians hold
onto many of their
cultural traditions,
most notably the art of
storytelling that takes
place around the
fireside to while away
the long winter hours.
Trolls figure
prominently in their
folklore, some friendly
and helpful, while
others are naughty
characters that
conveniently serve as a
source of blame for all
of life's troubles.
Sweden:
Crisp and clean, the
tranquil Scandinavian
country of Sweden offers
a variety of experiences
within its elegant and
sophisticated cities,
its picturesque medieval
villages, coastal island
archipelagos, peaceful
lakes and forests and
the icy tundra of
northern Lapland.
The capital city,
Stockholm, encompasses
14 islands on the shores
of the Baltic Sea. It is
a high-tech city with a
small-town feel, filled
with top class
restaurants, pulsating
nightclubs, cosy pubs
and a full array of
performing arts. Best of
all, nearly everyone you
meet is fluent in
English. Few visitors to
Stockholm can resist an
excursion to discover
the offshore islands:
the Stockholm
archipelago offers some
of the most beautiful
coastal scenery in
Europe, and can be
enjoyed from the city on
a day cruise.
The west coast and its
fishing villages is the
place for gourmets,
especially seafood
lovers, while those
digging for history will
be fascinated with
Uppsala, the ancient
Viking city where the
newest buildings date
from the 18th century. A
really novel excursion
is a visit up north to
the Ice Hotel, sculpted
from ice every winter in
Lapland where the Sami
people enjoy showing
visitors their way of
life, centred on their
reindeer herds.
Meanwhile, way down
south Smaland has been
christened 'the Crystal
Kingdom' in honour of
the famous glassworks
that exist there in
places like Orrefors and
Kosta.
Sweden is an enchanting
country, not as cold as
one might imagine
situated as it is in the
high latitudes, and is
well worth exploring
whether along the
meticulously maintained
roads or on the
extensive high-speed
train system.
Although Scandinavia is
often perceived to be a
distant location, it is,
in fact, closer than you
imagine. If you have an

must visit Scandinavia,
with its breathtaking
natural surroundings,
its refined culture, and
its sophisticated

Apple Danish pastries
A Danish Pastry is a sweet
pastry which has become a
speciality of Denmark and is
popular throughout the
industrialized world. The
Danish call them Wienerbrod
(Vienna bread, after the
Austrian capital) and the
Austrians call them
Kopenhagener (Copenhagen,
after the Danish capital). The
Danish Pastry, as consumed
in Denmark, come in numerous
shapes and sizes and can be
topped with chocolate, sugar
or icing, and may be stuffed
with either jam, marzipan or
custard. Here’s another
variety….

INGREDIENTS:
3 large (about 170g each) red apples, cored,
halved
1 1/2 sheets (25 x 25cm) ready-rolled butter
puff pastry, just thawed.
60ml (1/4 cup) bought vanilla-flavoured
custard
1 egg, lightly whisked
2 tbs demerara sugar

METHOD:
Preheat oven to 200°C. Line a baking tray
with non-stick baking paper. Cut each apple
half lengthways into 6 thin slices. Cut
pastry into 12 equal squares.
Place 1 teaspoonful of the custard onto the
centre of each pastry square. Top with 3
apple slices, overlapping diagonally across
the pastry.
Fold 2 opposite pastry corners into the
centre and secure with a toothpick. Brush
with egg and sprinkle with sugar.
Arrange pastries on prepared tray. Bake in
preheated oven for 15 minutes or until
golden brown. Remove from oven and set aside
on the tray for 5 minutes. Transfer to a
wire rack and set aside for a further 15
minutes to cool. Remove toothpicks.
Divide pastries among serving plates and
serve immediately.
