Australian Ice cream
Christmas pudding
Perfect for the Aussie
summer Christmas.
|
INGREDIENTS:
1 1/3 cups raisins, chopped
2/3 cup sultanas
1/3 cup currants
2/3 cup red glace cherries,
halved
1/2 cup chopped dried apricots
2 teaspoons finely rated orange
rind
2 tablespoons orange juice
2 tablespoons brandy
1/2 cup cream
2 litres of good vanilla
ice-cream, softened

METHOD:
Line a loaf tin with two
layers of plastic wrap.
Combine fruits, rind, juice
and brandy in a medium bowl.
Cover with plastic wrap and
leave mixture to stand at
room temperature for 2
hours.
Fold the fruit mixture and
cream into the ice-cream in
a large bowl, then spoon
into a prepared tin. Cover
tightly with additional
plastic wrap and freeze
overnight.
Remove the wrap from the top
of the tin, loosen plastic
along the inside.
Invert tin onto a serving
platter and lift the tin
away. Remove the plastic
wrap and smooth out the
wrinkles with a wet,
flat-bladed knife.
Serve with fresh fruit.
Serving suggestion:
You can use any combination
of your favourite dried
fruits up to the given
quantities. Dates, figs,
prunes, raisins and even
half lemon juice and rind
mixed with half the orange
juice and rind, also makes
for a refreshingly tasty
ice-cream pudding.
