LONDON:

Whether you arrive in London via the underground or inside one of the city's ubiquitous black taxicabs, you will immediately be greeted by a deep sense of history and met with the unique vibrancy of this incredible destination.

In its dark and troubled past, the city of London has survived Roman occupancy, sackings from the Celts, Romans, Vikings and Saxons, a Norman invasion, two great fires, the bubonic plague, Nazi bombings, the Spice Girls and Damien Hirst.  But the London of today promises something for everyone.

The London Eye lifts visitors high above the river into vistas that stretch tight across the fading skies. Further down on the South Bank, the Tate Modern contains one of the world's most incredible collections of Modern Art, while the city's 30,000 stores and boutiques will exhaust even the most avid shopper, and its 6,000 restaurants are only too eager to demonstrate why Britons revere their chefs as celebrities.

For those interested in exploring the country's heritage, the Tower of London is an excellent starting point. First constructed in the 11th century, the Tower has been rebuilt several times as later monarchs have left their mark. Still one of London's biggest attractions, and a great celebration of pomp that is free to all visitors is the Changing of the Guard at Buckingham Palace, which happens daily.

As the great dome of St Paul's reflects the colours of the setting sun, London comes alive with an unrivalled nightlife. For those up for something more thrilling than dinner and the theatre, London has a vast number of bars and nightclubs catering to all tastes.

PARIS:

It is impossible not to fall in love with Paris. The city's people are stylish and flirtatious, its architecture seductive, its restaurants and nightlife devoted to the pursuit of pleasure and its streets are scattered with dreams.

There is no 'best time' to visit Paris; in every season the city is always alive. Summer days are spent lazing on the banks of the Seine, sipping coffee at a sidewalk café, or idling in one of the city's many gardens or forests. In autumn afternoons the brisk walk from the Eiffel Tower through the Parc du Champ de Mars and up to the glittering Champs Elysées is accompanied with a carpet of leaves crunching underfoot. Winter nights induce a warm glow ice-skating in the outdoor rink at the Hotel de Ville, and in spring the passions of performers fill the air outside the Pompidou Centre and the nose is tickled with the subtle scents of flowering gardens.

There is an other-worldliness to this city, where beauty and elegance are favoured over purpose and practicality. Centuries of urban development have the appearance of having being mastered by a single hand with a strong sense of balance, contrast and aesthetics. The views from the Eiffel Tower or Sacré Coeur reveal hundreds of iconic attractions for the snapshot visitor, but the best way to see this city is by tucking your map back in your pocket and allowing yourself to get lost on its streets and avenues, discovering the city for yourself.

However long you spend in Paris, on departure you will know you are sure to return.

      Did you know.......

The City of Paris has a population of approximately 2,160,000 people.

English people consume more tea per capita than any other country in the world.

The Eiffel Tower is probably one of the most famous symbols of France and was built for the International Exhibition of Paris of 1889, took 2 years to complete and it was the world's tallest building up until 1930.

London used to be the largest and most influential city in the world.  With a population of over 12 million, it remains the largest city in Europe.

The Eiffel Tower has over 2.5 million rivets, 15,000 iron pieces, over 40 tonnes of paint and there are 1652 steps to the top.

French was the official language of England for about 300 years, from 1066 until 1362.

The River Seine actually breaks the city into the Rive Droite (Right Bank) north of the river and the Rive Gauche (Left Bank) south of the river.

Buckingham Palace has over 600 rooms, including 52 Royal and guest bedrooms, 188 staff bedrooms, 92 offices and 78 bathrooms.  The Queen and her husband, The Duke of Edinburgh, live in only 12 of the rooms.

Every year, over 13 million people visit Disneyland Paris, 5.5 million visit the Eiffel Tower, 5 million visit the Louvre museum, and 3.25 million visit Versailles Palace.

London is the world’s largest financial centre.

Paris has over 70 Museums, monuments and cultural tourist stops. Some of the best art in the world is housed in Parisian Museums.

French onion soup
Onion soups have been popular as far back as Roman times. They were, throughout history, seen as food for the poor people, as onions were plentiful and easy to grow.  Legend has it that the soup was created by King Louis XV of France. Late one night, he discovered he only had onions, butter and champagne at his hunting lodge, so he mixed them together to create the first French onion soup.  Although alternate stories do exist.

INGREDIENTS:
60g butter, chopped
2 tablespoons olive oil
6 (1kg) brown onions, thinly sliced
2 teaspoons brown sugar
2 tablespoons plain flour
4 cups beef stock

Cheesy bread:
12 baguette bread slices, each 1.5cm thick
olive oil cooking spray
1 garlic clove, halved
1 cup grated Swiss cheese

METHOD:
Heat butter and oil in a heavy-based saucepan over medium-low heat until sizzling. Add onions and 1 teaspoon salt. Cook, uncovered, stirring often, for 45 to 50 minutes or until onions are very soft. Stir in sugar and cook, stirring often, for 10 minutes or until onions caramelise.

Add flour to saucepan and cook, stirring, for 2 minutes. Add stock and 2 cups water. Reduce heat to low and simmer, uncovered, for 15 minutes to allow flavours to combine.

Make cheesy bread. Preheat oven to 180°C. Spray both sides of bread with oil. Rub both sides of bread with garlic. Arrange bread on 2 baking trays. Bake, turning once, for 10 to 12 minutes or until bread is light golden. Sprinkle cheese over 1 side of bread. Return to oven for 3 to 4 minutes or until cheese melts.

Ladle soup into bowls. Top with cheesy bread, season with pepper and serve.

Hint: You could place cheesy bread in bowls first, then spoon over soup. This will soften the bread and make it easier to eat.
